The kitchen garden supplies daily herbs, greens, and vegetables. The vineyard contributes not just wine but grape leaves for tempura, verjus for sorbets, grape skins for vinegar. The orchard’s seasonal procession, stone fruit, then figs, then citrus, then pomegranate, dictates menu evolution.

Our Viticultural Philosophy

We keep intervention in the vineyard to a minimum. Not out of ideology, but because this soil and these vines do better with less interference. This means:

Open flame, charcoal, smoking—fire is not merely a cooking method but the central organizing principle. Grilled lion’s mane. Pine-smoked lamb. Charred greens. The kitchen’s heartbeat is the hearth.

Grape leaves from the vineyard become tempura. Apricots are lacto-fermented. Plums transform into sweet-spicy condiments. Every orchard harvest finds its way to the table, celebrated at peak ripeness.

The taraak team understands food, technique, and flavour, united by one idea: let the ingredient lead, use fire with care, respect the work that grew it.

The chefs work alongside the estate’s viticulturist, orchard manager, and gardeners. The kitchen isn’t separate from the farm; it runs on it. The morning starts in the field, tasting for ripeness, working out what’s ready to pick that day.

There’s no showing off here. Technique serves the ingredient instead of covering it, restraint beats elaboration, and food this good doesn’t need dressing up.

Is food included in a stay at Raht Juneo Orchards?
Yes, all meals are included in every cottage stay. Simply tell us your preferred dining times and any dietary requirements on arrival. Breakfast is served 8:00–10:30 AM, lunch 1:00–3:00 PM, and dinner 7:30–10:00 PM at taraak, our farm-to-table kitchen.
Yes, in a limited way. taraak, the estate’s farm-to-table kitchen in Rajgarh, Himachal Pradesh, accepts a small number of tasting-menu reservations for non-residents. Bookings open 30 days in advance, are subject to availability, and run from a minimum of 2 guests to a maximum of 8 per reservation. Seats are limited, so booking well in advance is strongly recommended.
Yes. Vegetarian, vegan, and gluten-free options are available with advance notice, and we also accommodate allergies and other restrictions. For extensive modifications, please give us 48 hours’ notice. Our menus are designed as cohesive, multi-course experiences, so very significant changes can alter the intended progression of the meal.
For estate guests, all dining is included in the cost of your stay. For The Orchard Table and non-resident tasting menus, menu pricing and wine-pairing options are shared on enquiry, message us on WhatsApp for current prices.
Plan for 2.5–3.5 hours for a tasting menu; kitchen-table experiences may run longer. We serve one seating per evening to maintain quality and attention, and dinner service begins at 7:30 PM unless another time is arranged.

Non-resident reservations require 72 hours’ notice to cancel; cancellations and no-shows are non-refundable. We prepare specifically for each booking, ingredients are sourced, preserved items opened, and preparations begin hours in advance, which is why the full menu charge applies once a reservation is confirmed.

Yes, children are welcome. We can modify portions and spice levels, and alternative children’s menus are available on request. That said, the tasting-menu format and its extended duration may not suit very young diners.
